Although these shoots are perfect for a simple sandwich topping and tasty stir-fry addition, your kidneys might not love their high potassium load as much as your mouth does. Try substituting Alfalfa Sprouts instead of Bamboo. 

Compared to bamboo shoots these sprouts are lower in potassium and protein. They are chock-full of antioxidants and can be used in a variety of your favorite foods including soups, salads, sandwiches and stir-fry.
